The top left logo in the menu bar. I tried going in to System Preferences > Appearance but no luck. Is there a program required?

It was blue in Tiger. The default in Leopard is black. I don't know how to change just the apple, but Magnifique can change the color in Leopard through a theme.

Find the Apple icon in <hard disk>/System/Library/CoreServices/CoreTypes.bundle/Contents/Resources and change the color to whatever you like. Save and reboot. I did that for the displays icon. I used PS. Results below.

It seems everything is grayed out, though. It's worth a try.
