Let's say I have my computer connected via Ethernet and WiFi at the same time. Is there any way to see which connection is the one that's actually being used, short of installing iftop?

your ethernet will take preference over wifi.

If you have both turned on, run network diagnostics... it will say ethernet.

Click on yes then click on airport then click on Use Airport then it will use airport over ethernet.

Pretty simple to use.

As far as I know you can change the order of the interfaces in the Network Pref panel. The higher one will be used first to.

Below the list there is a small Gear button, if you click on it you will get a menu and you should see an option to change the order or priority.
