How can I fugure out what's making my internet so slow?

Sometimes my internet is at lightening speed, other times it is unbelieveably slow (worse than dial-up from 10yrs ago).

But surely it could be my provider, my modem, my AirPort Express, my AirPort card, my MBP... how can I work out where the problem is?!

When you notice it running slowly, run Activity Monitor and check the network activity at that time. Perhaps something is calling out to the internets and causing a delay with other things you're doing online.
