macOS glClipPlane object capping

I need to know if the following is feasible before embarking on a project using it. What I want to do is start with an object (simple cube or cylinder) and basically cut away at it with clip planes and using the stencil buffer to cap it. The end object could have potentially a couple hundred clip planes (though more commonly around 50-100). Is that likely to work more or less as described?
