Based on this thread I've written a small application to extract statistics from your Aperture library. This app will extract the count of each EXIF tag/value pair and save it out as a csv file enabling you to see your which focal lengths you use most often, which apertures you prefer and so on.

The application was written using AppleScriptObjC which was added to the new XCode in OSX 10.6 so it may only run on 10.6. Obviously without Aperture it's pretty pointless too!

Anyway it can be downloaded right from here (it's attached). I hope some people find it useful!

If anyone is interested in the code I'll probably be posting something over in Mac Programming...
