What is MC-model? I'm seeing it everywhere and its said that the iPhone 3GS running 3.1.3 "MC-model" can't be jailbroken. How do I know which is an MC model and which is not since I'm about to go pickup a 3GS from my local AT&T store.

What you have been reading about refers to MC models for iPod Touch, which have new bootroms. It's not that clear in the case of the iPhone (I have an MC model with the old bootrom).

As for your new phone, if you still haven't got it, then you are going to get the phone with 3.1.3 firmware which cannot be jailbroken or unlocked at the moment. The new jailbreak and unlock software will be released in about 2 months though.

Yes there are MB and MC models of iPhones

The point remains, the only criteria for jailbreaking is in fact firmware version and bootrom version as previous poster stated.
 
Whether an iPhone 3GS will have an MC or an MB model number appears to be completely random. It does not seem to correspond to date of manufacture, bootrom version, color, capacity, or any other factor which might vary from iPhone to iPhone. It has no impact on jailbreaking or any other thing you might want to do with your phone. I wish people would stop talking about it as if it actually means something.

Thats pretty much what I wanted to say, but I worded the whole thing wrong. The whole MC model thing only applies to the iPod, not the iPhone, and even then, the firmware is what matters. And the date thing was my mistake. Sorry about that.
