iPod touch I Lost Some Information In Notes Help Needed

I synced my iPod touch and my Mac replaced the notes from computer to iPod, not iPod to Mac. How do I restore this?

Restore your iPod from one of the numerous backups in iTunes...

Common sense man. :/

I did two backups but iTunes showing only one. What next?

I can't do this. iTunes overwrote first backup. What I need to do then?
