1. Little Snitch
(Alerts you to all information being SENT from your computer by an application. Handy for those programs trying to send serial numbers to check, set the rule once, never worry about it again.)

2. TweetDeck
(Lets you combine your facebook and twitter accounts into one nice feed, letting you see everything at once in real time)

3. Cocktail
(I came from the PC world, and so maintenance, keeping things clean and optimized is a hard habit. Cocktail will run scripts, clear log files and do other under the hood tweaks to keep your mac running beautifully)

4. Ventrilo
(Chat client, used in competitive gaming, but is also just a quick fun way to get a bunch of people together to chat. Easy to setup, plays with Windows well)

5. Steam
(When finally released out of beta on the 12th [most likely] will bring a whole new world of mac gaming with it. The Half Life Series, Counter Strike, Portal, TF2, DODS, L4D(2) and others to follow)

6. TeamViewer 5
(Allows for free remote connection and control of other desktops, be it a PC or Mac, simple to use)
http://www.teamviewer.com/index.aspx
Note: Password changes every time you start the app, so don't get any funny ideas :)

7. iChat with Google Talk
(Letting you use the best chatting app on earth (iChat :) ) but with anyone on any OS. Plus you can have video sessions with the build in iChat feature. It acts just like iChat but allows everyone to join! Though I saw the google talk client on Windows 7, it's fine, but definitely not as sleek.)

Tweetie is another good twitter client
BetterTouchTool if you have a Magic Mouse
smcFanControl to manually control your Fan Speeds in your MBP
QuickSilver (once you get used to it, it's a must have)

BetterTouchTool is great even if you don't have a Magic Mouse.

I've only had my mac for a few days, but I'd also recommend:

-Sugarsync (like dropbox but better)
-Plex/XBMC (the best media player, especially if you connect to a TV)
-Chrome

Once Steam is out, what are some titles to get

Counter Strike Source is a classic game, runs great on lower end hardware, but still looks pretty good considering all turned up.

plus it's only 20 bones

there is of course the whole HL series, L4D is also a good nab

You're going to get a warning for that tbp link, I suggest you remove it if you want to avoid moderator butthurt.

As long as we're pirating though:
Adobe Creative Suite 5 master collection is a must have (even if you only use Photoshop )

You realize that your Mac does most of the things that Cocktail does on a regular basis anyway, right? Most OS X "maintenance" utilities are pretty redundant. That's why nobody charges for them. At least, they shouldn't!

Actually you can only use half the features of Cocktail unless you purchase it.

Yes, but your Mac does most/all of this maintenance on its own anyway.

there are somethings that it also does that you must do manually, repairing disk permissions (helps prevent future issues) clearing old files and downloads, etc

Edit: Added Google Talk with iChat to the list at number 7.
