I use Carbon Copy Cleaner to backup. I've set it to backup to a sparse, rewritable disk image. If I, say, delete a file, then do another backup, will the file I deleted still be in the folder it was in, or will it disappear as if the backup was cleared and redone?
 
It depends on the settings you used when you setup the backup task. There is a checkbox option to "Delete items that don't exist on the source." You can leave that unchecked and the deleted files will stay in their folders on the backup image. Or if you check that box you can select "Archive modified and deleted items" and those files will be put into a dated folder at the root of the image, kinda like Time Machine does.
