Hey I know its sacrilege to mention Microsoft but they aren't so bad anymore .... we gotta worry about Google!!

But my question - Is there a way to define the boot sequence of helper apps ? Ya know the ones like istat and Launchbar. Can we control the order in which they start?

All launchitems get called at about the same time. The only way to alter this would be to create your own script that launches those item the way you wanted, and then replace the lauchitems with that.

Why would you want to?
Or is there another question that you didn't ask?
 
You can control them in System Preferences -> Accounts -> Login Items. However for your question of changing the start order of these items I would have to point you to some third party utility like MacPilot or similar. Not sure if TinkerTool can do this. TinkerTool is free while MacPilot is not.

TinkerTool System is another tool that comes to mind. Also shareware.

Worth a try.
