How can I clear my iPhone before I sell it?

Sorry if this a dumb question but I'm relatively new to IPhones.

I'm selling my 2 3GS's tomorrow and I want to know how to clean all my stuff off my (and daughters) phone before I hand it over.

Also, I'm getting new iPhone 4's on Thursday, so after I get them do I just log onto ITunes to restore all my apps etc. on to the new phone?

Thanks.

I looked into this a year ago when I got rid of my 2G. I can't remember where I got it from, but this is how it goes: Restore from iTunes and set up as a new phone, then completely load and delete music 3 times. Since there is no way to fully format an iPhone, this method gets rid of any traces of data by writing and rewriting multiple times.

throw it in the washing machine for about 10 mins. that will clean everything off of it.

or you can do that, but the washing machine is a lot less complicated.
