In Address Book.app, in the 'Groups' column, there is an option for 'Directories'. Clicking this option changes the interface, but it doesn't seem to let me do anything. Does anyone know what this is for, or how to use it?

Address Book lets you set an LDAP server, which feeds your address book a list of all the users on your network/group/whatever. So i think directories is a function of that-- you won't get any use out of it unless you work at MegaCorp.

You set up differnet ldap servers in the preferences, for example ldap.bigfoot.com
