A better book is O'Reilly's "Building Cocoa Applications," if you had to have only one. But both would make a more complete library. Aaron Hillegass' "Cocoa Programming for Mac OS X" is also a great book - but I favor the O'Reilly duet to it.

Does anyone know of a good book for learning Cocoa with Java, instead of Objective-C?

To my knowledge, there is no such book but only various resources in the Apple documentation.

While it may be a convenient combination of technologies, I would not really recommend it.

Yeah, Java is really not a great language to develop in unless you really need something to be crossplatform and if you're using Cocoa you're obviously not being cross plat :p
Besides; if you want a platform specific object oriented language get C#, at least its done well ;).
