I'm considering a MacBook Pro as my new day-to-day machine, and noted that nowhere on the Apple specs site does it mention a bridge battery like the last-generation of 15-inch PowerBooks offered, that would let you swap battery packs without doing a full shutdown of the system.

Can anyone with an MBP (or at least more knowledge than I) tell me definitively whether or not the MBP features some sort of bridge battery?

Not entirely sure what you mean by "bridge battery" but you can hot swap batteries in the new MacBook Pros.

I've just tested this myself by doing the following:

    1. Made sure external power was unplugged.
    2. Put MacBook Pro to sleep (not 100% sure if this is required)
    3. Pull out battery (the sleep light goes out at this point)
    4. Insert the battery again and press the power button
    5. A grey screen with a progress bar is shown and it boots straight back into OS X as I left it

    I hope this helps.
