Since we don´t have a disk drive on the MBA, and I have a very large external USB hard drive, why not just partition the drive in order to have a bootable restore partition with the install disks on it so there is no need for a disk drive? The only question is, how? Has anyone done this before?

You will not be able to boot from a USB drive. You'll have to use the remote boot.
