I'm a little confused as to what your problem is, specifically.
If you want to add artwork to an entire album (assuming it isn't added from iTunes automatically), you can select more than one song by holding down the Cmd (Apple) button while clicking each song, hit Cmd+i, and edit the album artwork from there. ...This will add the artwork to every selected song simultaneously.
As for Cover Flow view: If you want all of your songs to be grouped by album, click on the album column heading to chose that as your sorting technique.
