Hi, I used a program to remove unwanted languages (anything other than English) and it seems that some of the apps that come with OS X (iWeb, Pages) whenever i create a new page, the new pages display in Spanish. Any idea why ?

That's not Spanish. That's a special secret language developed by layout designers to give them an idea of how a page will look without actually having to fill it with real content. It doesn't have anything to do with your system languages. :)

Seeing as this seems to be a common new user misconception, maybe Apple should think about putting in a one time only message box about this?

Actually, that's no secret language - it's latin.

    It's known as Lorem ipsum.
