I'm looking into getting a used G4 Mac Mini to use as a server. What kind of hard drive does it take? Would an 80 or 160GB drive from my MacBook Pro work?

No, it requires an IDE (Parallel ATA) 2.5" hard drive. Your MacBook drive is SATA

Your best bet may be to plan on an external 3.5" Firewire drive

Well I do have a 200GB external hard drive I was going to hook up to it as well.

Can you recommend a good a good remote desktop solution? Would screen sharing through iChat be effective?

Edit: Answered my own question. Using Chax I can set up auto-accept screen sharing in iChat and set it up so that it will only auto-accept my screen name. YAY!!
