My MacBook just arrived as I write this! I'm not new to moving from one computer to another. I know Apple even has a migration assistant built in. My question is, in reference to the applications, will I overwrite the Universal apps that are the same apps as the ones on my PPC? For example - will my current copy of "Preview" (I know, not a huge app, but all I could think of at the moment...) overwrite the Universal version on my MacBook? Thanks!

I don't think so. I say run it and find out, it will ask you or warn you if it is going to overwrite things.

I tried migration assistant when I moved iBook G4 to intel iMac.
I couldn't get it to run properly.
might have been me doing somethnig wrong, but I've had no probs migrating PPC machines to PPC machines.
