Which application do we need to convert movies for ipad?
is there a difference on ipad after a conversion a movie that is 720p or 1080p or something lower than that?

I'm kind of new in this stuff.

1, if you're lucky, a remuxer like Subler will suffice. If you aren't, you'll need to completely reencode with Handbrake. Please use the forum search engine for these words: remux, Subler, Handbrake.

2, if it's an iPad 3/4 and the additional storage need of the larger format isn't a problem, go for 1080p and don't listen to people that state that the difference is negligable. It isn't. I've even published a series of 720p vs. 1080p comparisons made on the iPad 3.

Then, you can safely downsize your video if and only if the conversion time need (which can be hours) isn't a problem for you or you really need videos with as little storage needs as possible. (Properly encoded 720p videos generally take about 60% of the storage than properly encoded 1080p ones.) If you don't want to use those videos elsewhere, I'd even prefer downsizing them to be 1024 pixels wide so that you can save as much storage as possible.
