iStat isn't showing a temp or fan on my widget. Is there anyway to get it to recognize them? It just says n/a for both.

The fans keep kicking on and it is getting really hot suddenly. It has shut down twice randomly and not come back from being asleep a couple of times.

What kind of Mac do you have?

iStat Pro doesn't show the temps for my Mac Pro at all, I have to use Temperature Monitor to see them.

You need to have the SpeedIt kernel extension installed. The easiest way to do this is to install CoreDuoTemp.
