Apple Hardware Test - on your OS DVD
    Rember or Memtest from www.versiontracker.com
    TechTool Pro (not free)
    Final Cut Pro (not free)

I'd second Rember. It seems to test more thoroughly than Apple Hardware test, in my experience.

How do you test memory with Final Cut?

Just start working on a project Do things that take a lot of processing. FCP beats the snot out of memory and will crash on the smallest error.
