That, or it's really just a video playing in fullscreen and not a UI - it doesn't look like they actually touch the screen, just point at whatever they know is about to get selected.

Lol, it doesn't even look like they're interacting with it. She selects something and it takes half a second to update. Either it's a movie/slideshow like someone mentioned before me, or it's controlled remotely by someone else.
My sister does stuff like that all the time with her MBP, i.e. touching the display. I keep telling her if she really wants to interact with her screen on her computer there are other options for that.
