Mail 5.0 query - how to get rid of Mime-Version details etc.

Hi there,
Having a slight problem with Mail (5.0, OS Lion). When I receive or open an email, rather than just having the From, Subject, Date, To displayed, I'm getting things like 'Mime-Version', 'Content-Type' etc. displayed. Pretty annoying (screenshot attached), any idea of how i can get rid of them? Thanks!
