Deus Ex: HR (you probably forgot :)
There was this great military shooter Close Combat: First to Fight. I got Universal Binary patch but I am not sure if it is playable on modern Intel machines.

There's no non-Wine version of Medal of Honor for Mountain Lion right?

That was the precursor (in a way) to the Marathon series, yeah?

Correct; this was Bungie's first major release before the Marathon series which are, in my opinion, still the best games ever released on any computer platform.

    ----------

    Dark Forces was excellent, indeed.

What happened to Pfhorums, though? I checked it today, and it won't load. Perhaps the server is down/gone/fubar?

That's a pretty compensative list you have there, but here are some I found you have missed. These are a mix of OS X and OS 9 games.

    Heretic
    Hexen
Wolfenstein 1st and 2nd encounters. An official Mac remake of the 90's Wolfenstein 3D.
    System Shock 1 and 2
    Tom Clancy's Rainbow 6
    Shogo: Mobile Armor Division
The Operative: No One Lives Forever
    Clive Barker's Undying
    Call of Duty 1, 3 and 4.
    Call of Duty Black Ops
    Tom Clancy's Splinter Cell Conviction
The Chronicles of Riddick: Assualt on Dark Athena
    Battlefield 2
    Portal 1 and 2
    Star Trek: Voyager- Elite Force
    Descent 1, 2, 3 and 4
    Klingon Honor Guard
    Sin Gold
    Red Faction
    Redneck Rampage
    World War 2 Online
World War 2 Online - Battle Ground Europe

If I can find any more you have not listed I'll let you know.

Another older one I remember playing the demo of on my long gone Performa 6400... Killing Time.

The subwoofer in the 6400's tower made the shotgun rather loud if I recall correctly :D

    Tom Clancy's Ghost Recon
    Delta Force Black Hawk Down
    Battlefield 2142
    Star Wars Battlefront

Does MazeWars count as FPS ?

Is it worth noting which of these will or will not play on OS X?

I'm not accepting PPC ports. And no, it does not count.
I'm pretty sure Tom Clancy's Splinter Cell Conviction is not an FPS.
