Long story short, I don't want the 5 extra apps, and I don't want the dead-weight (approx. 80MB) they eat up on my Touch.

Appreciate a link with instructions on how to downgrade from 1.1.4 to 1.1.2. I'm sure the answer is buried somewhere in these threads, six months ago, but I can't find it after searching for a bit. Just point me in the right direction. Thanks.

Search for on google the 1.1.2 firmware (theres even videos on Youtube with links) then open itunes and hold shift as you click restore, then open the firmware you downloaded

I dont see how the answer could be buried in these threads, as 1.1.4 just came out today.

Id attempt the previous method, by option clicking restore in iTunes.
    No guarantee it would work.
