Thinking of getting a new "SE" four inch phone to use while cycling and other times when I don't want to be weighed down by my 6 plus
Both of my phones will be unlocked so I would just swap out my SIM card appropriately.

My question is: Would I be able to pair my watch with both phones?
 
Sorry that I answered your question 100% correctly. I could lie or speculate and say 'yes' if that would may you feel better. However the answer IS maybe or maybe not because no one knows except Apple and Apple 'ain't told' me or anyone else.
 
It's just not possible, i have 2 phones and had a watch you had to delete it and reconnect to each watch.
totally sucked.. AW is only able to link to a single device at anyone time.

Why would people pair 2 watches to one phone? Do people buy 2 watches? I know I have one and my wife has one but we each have our own phones

I'm going to say for "fashion". A sport watch for working out or doing things where it might get beat up and a fancier one for dress occasions? Some people had different watches fo different situations before Apple got into the market.
