I have Plex Player and Media Server on my iMac. Is there a way to control Plex on my imac throught Apple's Remote App?

I don't think you can with the Apple's app, but you can with 3er paries apps, like Rowmote, Plex App and .... (there is another one but the name scape it at the moment).

you're in the "unwatched" movies, go into "all movies"

Well, recently added means just that, so the list will naturally change over time as new movies are added. It doesn't show all your movies; only those recently added. I'm not sure what you mean by "w/unwatchable movies".

Ok so is it possible to put in "recently added" place a list that shows every time all the movies of the directory?

If you want to see all movies, don't use the Recently Added category. Use the All Movies category, as highlighted in my earlier screen capture.
