Since 7.0 I've been able to tag all this stuff in iTunes... I used to use Lostify but I'm not sure it's needed anymore...

I have this exact problem. Any TV shows that I import myself (not purchased from iTS) and tag as such in iTunes, show up as a TV show in iTunes but does not show up under TV shows on my iPod. I'm at work now, but I will for sure be testing this when I get home! :D

That's odd, tagging in iTunes works for me!

Are you setting both the Genre and Video Kind to TV Show?

The difference is that if your iTunes library ever got corrupted and you would have to re-import the lot you would have to re-tag "iTunes-tagged" videos. Check by dragging an "iTunes-tagged" video to the desktop, delete the file in iTunes and re-import in to iTunes and you will see what I mean. Any music video will show up as movie. This does not occur with Lostify tags.

I wish you could metatag any type of video file, not just iTunes playable. Moreover, I wish that (after being able to tag the files) you could keep them anywhere on your HDD (and not in iTunes) but still have them show up in FrontRow as whatever you labelled them as. Until that becomes a possibility, I suppose I'll just be accessing everything from the Videos folder in FrontRow.
