Does anyone have any software recommendations for this particular ripping task?

In order to rip and tag our own archived catalogue of audio:
I am after beginning with an audio CD and ending up with tagged mp3 files. Or, as the audio often begins as folder hierarchies of aiff files, a program that will replicate the folder hierarchy as it converts and tags.

I often use Protools' mp3 export feature as i use the program anyway but this is not a very efficient method of doing this. I also have Metadatics and iTunes but feel there must be a complete package out there somewhere.

(also, this is used in-house and the audio in question is not logged on the CDDB, so tagging is mostly manual)
