A nice feature of OS X is that you can highlight text in any application and right-click (or ctrl-click) to "Search with Google".

But what if I don't want to use Google? Is there a way to change this setting to search with another engine (like DuckDuckGo, who don't track my searches)?

Apple makes it trivially easy to change your default search engine from Google to Yahoo! or Bing. If you want to use one of the other engines, then you will just have to do it from that engine's website.

even though there is a duckduckgo bar extension, it does not integrate as well as it should, it does let you search in the context menu in safari, but not in the default search engine sense.
