open the terminal ... (assuming you're using OS X)

    Code:
    mkdir ~/Desktop/iPod_songs
    cd /Volumes/[i]iPod's name[/i]/iPod_Control/Music/
    cp -R */* ~/Desktop/iPod_songs

your songs will be in the folder on the desktop ... do what you want with them at will

    Cheers!

or, as the person above you said, get the app called Senuti.

You know, because it comes in handy when your iPod is filled to capacity, and iPod capacity > computer's capacity :p and you only want some of the songs...or when you want a playlist or two as well..

I use iPodRip. It works great because it imports the meta data.

Sharepod is free for windows, http://www.sturm.net.nz/website.php?Section=iPod+Programs&Page=SharePod#download
It is probably worth download the *.ocx files to your iPods root directory too... Many PC's *don't* actually have those files.
