iPod touch Videos on iTouch

When you watch a video on YouTube, the quality is pretty good, right? Well, I like to download the video, so I can watch it even when I don't have access to the internet, but when I put it on the iTouch, the quality is bad (or at least worst, & not as clear, but the audio is the same). So how do you get the quality to match? (the video format is mp4 or mov)
