So I jailbroke my iPod Touch using 2.2.1,
I had it so when it resprings or powers on the Leopard Welcome Video plays. Instead of iPod on the top right hand, I have my name.

I upgraded to 3.0 yesterday. Looking forward to it, powers on, I see the welcome video. I check the settings, says 3.0. I notice the top right hand says my name still.

I think I'm liking 3.0,has this happened to anyone else?
 
this has happend to every firmware in the past, this only occurs when you udpate and not restore, basically when you update the new firmware just updates certain files so things like numeric battery/wifi, ipod carrier image etc will still remain unless they are modified by the update.
 
When I restore, should I restore from backup or set as a new iPod?

New iPod. These things (custom name, battery percentage hack, etc), are stored in the backup. You need to start it as a fresh iPod and sacrifice all of your app settings in order to wipe that.
 
I wouldn't wipe it if I were you. Instead, you should re-jailbreak, undo all the jailbreak settings, and then restore your iPod (un-jailbreak) with the current iPod backup. This way you won't lose anything.
