Can I expand the choices from Inbox, Sent, Trash on my Ipod touch apple mail program when I wish to "file" something?

If not directly, is there a workaround?

New to the Ipod, forgive if this question seems basic.

Also, what is that little white plastic thingie that comes in the box for? Looks like some kind of stand, but...
