I would like to prevent that the screen of my iPhone goes black when I listen to music (either with Music or any radio app) and the phone is connected to a charger. I seem not to be able to do that - the screen goes always black after some time.

How can I make sure that the screen stays always on and shows the app that I'm using and the title of the music that is being played?

You can select Never in Auto-Lock. When Never is selected, your iPhone will not lock automatically.

Go to:
Settings Screen & BrightnessAuto-Lock → set to Never.
 
If you're using the Music app and listening to something with lyrics switching to the lyrics view stops the screen from turning off.
