Long story short an application I use for my job isn't working on 12.2 and I need to go back to 12.1. I have a ton of time machine backups since buying the M1 Max in November, is there a way?
 
Unless tm is able to do it... my guess is... this is going to be a difficult journey, with no promise of "reaching the destination".

Back in the "days of Intel" "going back" was easily done.
But... not so easily accomplished now.
The "sealed system volume" is probably going to get into the way.

Then... make a USB flash drive installer (don't know if that's possible now, haven't tried it).

Were you able to solve the issue? I ran into a similar situation and I couldn't go back to 12.1.

Step 1: Download 12.1: https://mrmacintosh.com/macos-12-monterey-full-installer-database-download-directly-from-apple/

Step 2: Follow this guide: https://mrmacintosh.com/how-to-create-a-bootable-macos-12-beta-usb-drive-in-5-min/

Step 3: If you're on an M1, after you downgrade, use this code in the terminal: "/usr/sbin/softwareupdate --install-rosetta --agree-to-license"

After that you should be good to go! Keep in mind though if your machine was shipped with 12.2 installed you won't be able to downgrade (I don't think).
