I went to the gym today with my AW1 running watchOS 3. I started the workout app and a HUGE list of workouts showed up. I don't recall all of them but weight training, hockey, skating, golf, squash, tennis and many more were there. Had to be 50 items on the list. I tried to select weight training but nothing would load. Had to power off the watch and restart it to get workout going. When I did restart though it was back to the old shorter list of workouts.

Did something hidden sneak out?

It sounds like you were looking at the labels available for "Other" workouts.
That's possible, but I didn't even know such a thing existed. Either way when I selected one of them I could not carry on to starting the work out.

How does one get to a "label" for an other workout? I just tried it out and could not find anywhere to apply a label?

Maybe it was a hallucination?
I was not wearing my reading glasses but I was not hallucinating. First time I've seen that list.

I read a review of watchOS 3 that mentioned an insane amount of "other" workouts available, so I believe it's plausible. I unfortunately don't remember what review it was.

Thanks, I wish I could replicate it. Now it is back to the regular short list of options.

if you regularly use named "other" workouts, they'll be shown in the main list.

That makes sense. I wish they would let us use scribble to add our own names. I have an under desk elliptical and I don't think the regular elliptical would register correctly.

After you complete an Other Workout scroll down and just below Save it has a Name button. Click on it.

This is only available in the Other Workout and after you save it it will show up in your main list.

I have since found this thanks but the first time the list came up I was starting a workout, not ending it.

Just for kicks took a screen shoot of all the Workouts listed under Other. It ended up being 15 screen shoots. So just made a list instead.
