i called apple, scoured the site and got no answer. anyone have any insight? i'm guessing the unlocked 3GS and the 8GB 4 don't work since the last releases didn't. edge works fine but... it's edge!

do unlocked iphone 4s' work on tmobile 3G?

I was wondering this as well for the 4S. I plan on getting the 4S unlocked anyway so when it's available in Nov, I'll pop a TMo pre-paid in it to see if it works on their 3G. If it does, I'll cancel my AT&T acct. If not, I stay w/ my unlimited AT&T iPhone plan that's grandfathered in.
Gut feeling is that it won't work though.

Correct -- the 4S does not have the AWS frequencies for T-Mobile's 3G's network.
That is confirmed by the Tech Specs page on Apple's website.
