Are there any USB-C docks that would let me do this? I have 2 x 1080p monitors that I would like to connect to my Macbook that along with ethernet and a couple of USB's for mouse + KB. The Macbook will be in clamshell mode. Looking around most docks only support one monitor or or 2 if your not charging the device. Does the Macbook even support this usage?

No, the MacBook does support two external monitors but they'll display the same view (mirrored). Clamshell mode doesn't make any difference, you'll either have one MB screen + 2x external or just 2x external.

In Boot Camp, the MB should be able to display extended views on two daisychained monitors as Windows supports displayport 1.2 multi stream transport (MST), which macOS does not.

I own a MacBook and CalDigit usb c dock. The dock supports one external monitor via displayport OR hdmi.

Fantastic, looks like I'll need to return the MacBook and get either a MacBook Pro or a Surface . Thanks for your help.
