I have a 2G touch, so obviously it has never been jailbroken. If a 2G jailbreak is ever released, will it allow for running applications in the background? I don’t really have any complaints about my touch, but I would love to be able to run apps like last.fm, Pandora, npr now, etc. in the background while I play games or surf the web. Is that possible with jailbreaking?

Yes. There is an application in the Cydia Installer on jailbroken iPhones and iPods called "Backgrounder." It is extremely useful; to enable an app to be running in the background after installing, you simply hold down the home button for 3 seconds, and the app will close and continue running. It is wonderful for internet radio apps like Pandora, etc.
 
Awesome... I wonder why Apple doesn't allow that. Can't wait for a 2G jailbreak.
