Is this game any similar in game play to what Starflight was? (Starflight was my favorite game on the PC from ages gone past)

You should download the demo, bud! I can say from experience that it is a highly addictive game. You find yourself really getting into the story.
 
Can't say I've ever played Starflight, but Escape Velocity is a very fun game, and also very expandable. And yep, it has a demo.
