Can you explain more?

Sounds like you receive an email and it automatically saves the the email address as a contact?

I have never seen this before and there is no option in settings to do so.

If it's Gmail you're using I think there's an option in Gmail to automatically add a person to your contacts when you send them a mail. You might want to turn this option off if it's that?

This also happens if you're synced with Exchange. If you get cc'd in on an email it will add it as a suggested contact.
