Hi

For privacy reasons, is it safe to go to websites that uses “cookies” as I’ve noticed that a number of websites that I regularly visit are now using cookies?

Almost every business website has used cookies for many years. Generally it's safe. Depends on how they use them. A lot of sites find ways to share information of your activities with other websites. So, if you don't like that, you can disable cookies, and / or use a program that blocks them.

Are there even websites that don't use cookies? In any case, even if you don't allow use of cookies, they still have ways to track you (e.g. embedded 1x1 pixel images, etc).

Indeed, and also without having the cookies enabled some of the core functionalities of a website might not even work.

You’re seeing a newly required notification brought about by EU regulations. Nothing has changed. The websites you’re seeing that on have always used cookies. The vast majority do and they are generally harmless.
