With the external screen restriction of the MacBook Air, does anyone know if this would work with a MacBook Air?

It’ll work because it uses software similar to DisplayLink.
 
Does that mean it can run two separate desktops simultaneously on each screen?

Yes. However, you lose ability to view some types of DRM content like Netflix or Apple TV+ when the monitor is plugged in.
 
I really hope you didn't buy this. I registered this account just to warn you against the product. They work atrociously poorly with macs; none of the drivers are especially functional. I've never made the touch screen functionality work. The cable-situation you will have to enter to plug the device into an air is also hideous. Eventually the lower monitor just stopped displaying image altogether (despite showing an image when power cycled and showing on the Mac as an external display).

This product is a very cool idea but it simply is not made with Mac in mind and will dissapoint at each turn. I bought two in the kickstarter stage and am now trying to resell them on Craigslist.
