It is not advisable to block iOS updates, as updates are meant to fix problems and protect you and your use of the phone.

The option you are inquiring about works. You download the profile to your phone. Again, not recommended, especially given your posting history.

Why would you want to? iOS 12 is great and only getting better, not to mention your devices will be kept secure.

Right now it's iOS 12 on iPhone X. What if the iOS 12.0.1 update changes things for the worse?

That is my fear.

Well it doesn't. iOS 12.0.1 on my iPhone X and iPhone 6s is great; it breathed new life into my grandmother's iPad mini 4 and even fixed lots of bugs she was having with iOS 12.

Then just do what others with the same concern do: wait a day or two and see if early adopters complain of issues.

Unless there are notable security updates (or a definite fix for a bug that I am experiencing), I pretty much wait at least 24 hours.
 
The time to install a TVOS beta profile is in August at the very end of the iOS update cycle before the next big version of iOS comes out in September. Not before.

Each version of iOS 12 will get a better & better throughout the year until it finally hits "gold master" essentially in August.
Then if you want to stick with iOS 12, install the profile then before the buggy mess of the next big iOS version comes out. Not now.
