I want to downgrade my iphone 4 to 5.0.1 but I don't want the OTA to waste my space with that "other memory" and I don't want jailbreak. PLease someone help me.

Without a jailbreak and installing a tweak. Nothing, I believe. Plus, you can only downgrade if you have the SHSH saved.

I do have the shsh saved, will it work if I install a lot of apps in my iphone so that I have no free space? Than I delete the apps and the download stops. Will it work?

    No.
There's nothing you can do on stock firmware to stop the OTA update taking up room in your phone.
    Thanks Apple:)
