I deleted the beta profile and restarted the phone. In the past I could install the latest public normal release. I need a backup with that to move everything to my iPhone X. That doesn’t seem to work anymore, software update still says it’s up to date. I think I need to go back 11.1.

But that erases everything on my phone wouldn’t it? I wouldn’t be able to get all of my apps and settings.

You can't go backwards without restoring.

If you made an iTunes backup before upgrading to the beta (like you're supposed to do), you can restore from that.

Two options:
-Simply update the iPhone X to the beta and then restore your backup.
-Try a shift/option downgrade to install 11.1 over 11.2 without losing all of your data, then make an 11.1 backup to use on the iPhone X.

The latter is definitely a YMMV experiment. Sometimes it works and sometimes it leads to massive corruption issues. So OP if you attempt this. Definitely make a backup first just incase.
