How to get the folders on the right of the dock to stay? (Better explained inside)

    So, what I mean is that on the dock you have a small separation that separates your normal apps (Finder, Safari, etc..) from your documents folder, downloads folder and trash.

    Now, I have changed my Documents and Downloads Folder icons so that they look very awesome, problem is that everytime I download or make a new document it falls right on top of my folder (sort of like everytime you make a new file it piles up over the other one, and you only see the newest one on the dock (if you click on it however, you can see a small list of previous files)).
    Is there some way I can stop this from happening? I want my files to be accessible quickly from the dock, but I also want to see only my Downloads or Documents folder and not the documents within.

    Hope this makes sense haha. If you don't understand tell me and I'll try to explain it better :)

    I'm using Leopard 10.6.8 btw..

    Right-click on a folder on the Dock, select "Display as" Folder
