My speaker on my iPhone X started messing up. Apple is sending me a new replacement, I’m sure it will be on an older software version. I don’t want to update it cause I want to be able to jailbreak. Apple made me update my current one to see if it helped with the issue. And Ik when I go restore my new x from a backup it’s gonna tell me I have to update. How do I get around it?
 
Yeah we will see. Any suggestions on transferring all my stuff without updating?

I think you just have to make a backup with iTunes, then use that back up to setup your phone. I always prefer to do a clean install. You always have the option to update or not.

iTunes ask you all the times that you connect the phone. Take it to an Apple Store to assist you, those guys gladly will help you with that, if you are not sure, don't risk to loose you data.

Closest Apple store is 2 and half hours from me. I just want to be able to put all my stuff on the new phone and not have to update it.
 
One you go forward with data you can't go back. You will have to update or lose user data since the last update.
